In der vorliegenden Arbeit wurden die Milchsäurebakterien L. brevis IGB 1.29, L. brevis ATCC, L. plantarum und L. lactis anwendungsspezifisch für die Verwertung von Weizenstroh-Hydrolysaten zur Milchsäurefermentation charakterisiert. Untersucht wurden die simultane Verwertung von Glukose und Xylose, die Inhibierung durch Lignozellulose-Abbauprodukte sowie die Produkttoleranz. Für L. brevis wurde ein Stoffwechsel ohne die Bildung von Nebenprodukten aufgeklärt und der Prozess bei niedrigem pH-Wert (pH 4) bewertet.
