Lately, there was observed an outbreak for many illnesses combined with having some foods which are high in their contents of some components such as sugar, salt, nitrite and fat which called white poisons , and the having of such foods leads to diabetes, obesity, hypertension, cancer and heart. According to the recently consumer interesting to prevent the outbreak of some these diseases, this book was carried out to prepare some healthy food items with good overall acceptabilities in order to help the consumer to minimize the causes of these illnesses. These healthy food items including diabetic and non-diabetic guava jam by using some sweeteners. Also, it included the preparation of some low-sodium and low-nitrite basterma by NaCl-substitution with KCl and nitrite-reduction, besides the processing of low-fat beef sausages by using different fat replacers. Also, this book provides valuable scientific information on clinical nutrition. This book is useful to professionals in food technology and nutrition fields especially clinical nutrition also for academic studies in Universities and Research Centers or anyone interested with special foods processing field.
