Monoacylglycerols belong among the most important esters of glycerol and fatty acids that are widely used in the food industry as emulsifiers. Due to their antimicrobial properties they are applied in the medicine and pharmacy for the prevention and treatment of various diseases. Moreover, they serve for the facilitation of pharmaceuticals and vitamins administration. Glycerolysis is the most frequent process used for their manufacture. However, this is relatively energy demanding. Recently, the enzymatic industrial ways using lipases have been intensively studied because of milder reaction conditions. Especially alcoholysis of triacylglycerols with glycerol or esterification of fatty acids are exploited. The perspective method of monoacylglycerols preparation is the fatty acid addition to glycidol by the nucleophilic opening of epoxy ring. The optimum reaction conditions, i.e.The optimum reaction conditions, i.e. the reaction temperature, time, molar ratio of input components and a suitable catalyst amount were determined.
